Broccoli and Potato soup as the name suggests is a healthy soup that is made with broccoli, potatoes and milk. This broccoli soup recipes goes to my growing list of Ekadashi Friendly recipes. You can have this soup if you are fasting on Ekadashi. Hence, I have not used onion and garlic. Soups are very healthy and you can stay healthy and energetic even when fasting. Adding potatoes makes the soup thick and filling, also it is very easy and simple to make!!
Broccoli florets: 200 g
Potato: 200 g
Milk: 3.5 cups
Butter/Ghee: 1 tbsp
Salt: as required
Pepper powder: as required
Roasted cumin powder: as required
Pressure cook potatoes for five whistles or until soft. Once the pressure subsides peel the skin and mash the potatoes and keep it ready.
Clean and separate the broccoli florets, wash them and grind/pulse them to a coarse paste in a mixie/blender adding little milk if required. Keep this aside.

In a saucepan, add butter and fry the broccoli paste for a couple of minutes.
Add milk to the saucepan and let it cook with the broccoli paste stirring often.
Once it starts to boil, add the mashed potato and reduce the flame. Mix well, potatoes will thicken the soup.
Once it starts to thicken add required salt, pepper powder and roasted cumin powder and mix. Let it cook for a minute.
Switch off the flame.
Enjoy piping hot!!
- If you are not fasting, you can add garlic and onion for more flavour.
- Adjust milk according to your preferred thickness.
