Easy Carrot Pulusu as the name suggests is an easy sambar that is made with carrots and only carrots. Why this name? Well, there are three kinds of pulusu that can be made. One with freshly grounded spices like muddha rubbina pulusu. Second, with already prepared sambar powder and grinding few more ingredients along with it e.g vegetable sambar, keera pulusu, ulli vankaya pulusu etc.,
Third, is by preparing pulusu with Pulusu Mirapadi. My list of Easy Pulusu Varieties is going to be using this spice powder. All it takes is one day’s hard work of grinding the powder in advance. This list of easy pulusu varieties will be of great help when we are really bored or sick or during hectic mornings. Do give these a try if you haven’t ☺!!
Carrot: 3 cups chopped
Toor dal: ½ cup
Pulusu mirappadi: 1.25 tsp
Tamarind Paste: 1 tsp
Jaggery: 1 tsp
Turmeric powder: a pinch
Gingelly Oil: ¼ tsp
Salt: as required
Coriander Leaves: for Garnishing
Mustard: ½ tsp
Curry Leaves: a sprig
Oil: 1 tsp
Clean and wash the toor dal and add enough water, turmeric powder, gingelly oil and pressure cook for 5 whistles or until soft.
Chop the carrots into slightly thick round pieces. Pressure cook for 3 whistles or until soft but not mushy. Keep this ready aside.
In a saucepan add cooked dal, carrots, tamarind paste, pulusu mirappadi, jaggery, required salt and mix.
Add enough water to bring to your desired consistency.
Cook until it starts to boil. Do the seasoning and pour on top.
Enjoy with hot rice/chapati/toasted bread!!
- Adding jaggery is optional.
- Adjust pulusu mirappadi according to the spice level of the chillies that is used to prepare your powder.
- As there is no thickening agent other than toor dal, adjust the amount of dal/water according to the consistency required.
