Cauliflower Sambar as the name suggests is a simple delicious sambar that is prepared with cauliflower and toor dal. Sambar is one of the important dishes for lunch in South India. Toor dal: 1/3 cup
Turmeric: a pinch
Gingelly oil: ¼ tsp
Cauliflower: 1 small sized
Pearl Onion: 1 cup
Fresh Peas: 1 cup
Tamarind paste: 1 tsp
Jaggery: 1 tsp or 1 small piece
Salt: as required
Coconut: ½ cup
Roasted Chana dal: 1 tbsp
Sambar Powder: 2 tsp
Mustard: ½ tsp
Curry Leaves: 1 sprig
Oil: 1 tsp
Wash the dal and add enough water and a pinch of turmeric and gingelly oil and pressure cook for 5 whistles or until soft.
Separate the cauliflower into florets.
Blanch the florets in warm water with a pinch of turmeric and little salt for 5 minutes.
Clean the florets and cook the florets in a pan sprinkling some water and covering the lid until soft but not mushy.
Also, cook the pearl onions and fresh peas for one whistle or until soft. Keep these ready.
In a mixie add the coconut, sambar powder and roasted chana dal, jaggery, tamarind paste and add little water and grind to a smooth paste. Keep this ready.
Once the pressure subsides, in a pan mix the dal, cooked cauliflower, pearl onions and peas.
Add ground paste, enough water (Sambar should not be runny) and required salt and cook until it starts to boil.
Do the seasoning and pour on the top.
Enjoy with rice topped with ghee and appalams!
- Adjust jaggery as per your taste.
- Add chilli powder if you want it spicier.
