Cornmeal Uthappam as the name suggests is an Uthappam that is made with Cornmeal. Chekku dosa is an authentic dosa that is made with coarsely ground rice and toor dal, I’ve adapted that recipe but with cornmeal instead.
Cornmeal is a coarse flour ground from dried maize. It is available as coarse, medium and fine flour. Cornmeal has numerous health benefits like rich in iron, phosphorus and gluten free. So it becomes a good substitute for wheat. But it is not available as fine as wheat flour. When I mistakenly purchased this and had no clue on what to do was when this recipe was born.
We all loved it so this became a regular one on the menu. As it needs no soaking, grinding and fermenting it became more special. Do give this a try ☺ I used finely ground yellow cornmeal for this recipe. Do check this space for more cornmeal recipes ☺
Cornmeal: 2 cups
Curd: 2.5 cups
Ginger: 1” piece
Salt: as required
Urad Dal: 2 tsp
Chenna Dal: 2 tsp
Mustard: ½ tsp
Oil: 2 tsp
Curry Leaves: 1 sprig
Chop the onions finely and keep it aside.
Grate the ginger and keep it aside.
Chop the curry leaves for garnishing.
In a mixing bowl add cornmeal and curd and mix without any lumps.
Add chopped onions, grated ginger and chopped curry leaves.
In a seasoning pan do the seasoning and add with the batter.
Add required salt, and bring the batter to an idly batter consistency by adding required water.
In a non stick tawa, drizzle some oil and make slightly thick dosas like uthappam. Cover and cook until golden brown on both the sides.
Serve hot with idli dosa podi.
- Add grated carrots for a healthier option.
- You can add few oota vegetables and make Guntapangalams following the same procedure. Hmm…yumm!!
- Add ½ tsp of ghee for a tastier dosa.
- You can also use sour curd for a soft and tasty dosa.
