Green Beans Koora is a poriyal/stir fry that is made with Green Beans. Koora/poriyal can be prepared in several ways and this is another variation that is followed. It is very simple and also very tasty. All the flavouring ingredients are used just to add mild flavours. So, there are no specific quantities followed. Just go by your instinct or follow this as such.
Green Beans: 220 g
Salt: as required
To dry grind:
Garlic: 2 small cloves
Dhaniya: ¾ tsp
Coconut: 1 tbsp
Red Chilli: 2-3
Mustard: ¼ tsp
Urad dal: ½ tsp
Curry Leaves: a sprig
Oil: 1 tsp
Wash clean and chop the green beans. Pressure cook for 3 whistles or until soft. You can also stir fry with more oil, cover and cook until soft.
Grind the ingredients mentioned in a mixie without adding water. Keep these ready.
In a pan add oil and do the seasoning.
Now add the cooked beans and fry for a couple of minutes until all the water is absorbed.
Then add the ground paste and cook until the raw flavour is lost. Add required salt and mix.
Switch off the flame, healthy koora is ready!
Serve with hot rice topped with ghee!
