Instant Tiffin Sambar is a very simple dish that can be made in a jiffy. It tastes delicious with Dosas, Idlies and Ven Pongal. This does not require cooking dal and hence the name.
In this COVID-19 lockdown, this helps a lot when we have rationed pulses and limited vegetables. You can make this with just onions and tomatoes. I had this recipe sitting in my laptop for a very long time and just now I realized its importance.
This is an exclusive avva’s recipe so I would like to thank her for this ☺ also would like to highlight another lockdown recipe that is already posted which is Pindi Masal which needs just onions and tomatoes.

Tomato: 3 big ones
Onion: 1 big
Green Chili: 1
Oil: 1 tbsp
Salt: as required
Coriander Leaves: for garnishing
Coconut: 2 tbsp
Roasted Chenna dal: 1 Tbsp
Sambar Powder: 2 tsp
Turmeric powder: ½ tsp
Tamarind paste: 1 tsp or as required
Poppy Seeds: ¼ tsp
Jaggery: 1 tbsp or as required
Mustard: ½ tsp
Hing: ½ tsp
Curry Leaves: 1 sprig
Oil: 1 tsp
Chop the tomatoes into small cubes and keep it aside.
Slit the green chilli and keep it aside.
Chop the onions lengthwise and keep this ready.
In a mixie add the coconut, sambar powder, roasted chenna dal, turmeric, jaggery, tamarind paste and add little water and grind to a smooth paste. Keep this ready.
In a heavy bottomed kadai, add oil and mustard seeds and let it splutter. Then add hing, curry leaves and slit green chilly and sauté for a minute.
Then add the chopped onions and sauté till it becomes translucent. Now add chopped tomatoes and add a cup of water and cook covered until everything is cooked soft and mushy.
Now add the ground paste and add the required salt. Add more water if required. The consistency should not be very thick as well as it should not be watery. Cook this until the raw smell goes and bring it to boil.
Adjust tamarind paste according to the tanginess of the tomatoes.
Now garnish with chopped coriander leaves.
Your Instant Tiffin Sambar is ready. Tastes good with Dosas and Idlies.
