Kovai Kaalan is a very popular street food that is sold in Kovai alias Coimbatore and Kaalan means mushrooms. This is an addictive street food one can ever have!! My cousin passed this recipe and being an ardent fan I tried this immediately. So, here comes the yummy recipe ☺
I have divided the recipe into three parts. Frying the mushrooms, preparing the masala and finally the mixing.
Onions: 2 cups chopped
Green Chillies: 1 slit
Coriander leaves: for garnishing
Lemon: to squeeze as per taste
Oil: for deep frying + 1 tbsp
Button Mushrooms: 400 g
Maida/All purpose Flour: ¼ cup
Rice flour: ¼ cup
Ginger Garlic Paste: 2 tsp
Turmeric Powder: ½ tsp
Chilli Powder: ½ tsp
Dhaniya Powder: 1.5 tsp
Jeera Powder: 2 tsp
Sesame Seeds: 1 tsp (optional)
Salt: as required
Water: as required
To Grind for masala:
Garlic: 6 cloves
Jeera: 2 tsp
Dhaniya: 1.5 tsp
Fennel: 2 tsp
Cinnamon: 2” piece
Ginger: ½ “ piece
Peppercorns: ½ tsp
Salt: as required
Clean the mushrooms with a damp cloth and wash in fresh water.
Chop the mushrooms into small and slightly thick pieces. Keep it aside.
Chop the onions finely. Keep few for garnishing separately.
Peel the skin and keep the garlic ready.
Chop the coriander leaves and keep it aside.
Grind everything mentioned under to grind by adding little water and required salt (we will be adding little for the mushrooms, so add accordingly) in a mixie and keep it aside.
Frying the Mushrooms:
In a mixing bowl add maida, rice flour, ginger garlic paste and all the masala powders. Add the required salt and give a good mix. Add little water and make a thick paste.
Add the chopped mushrooms to the mixing bowl and mix well such that the thick paste is coated well.
Let this sit for 30 minutes.
In a frying pan add enough oil and deep fry the marinated mushrooms. Drain the excess oil in a paper towel. Keep this ready.
In a pan add a tbsp of oil and sauté the onions and chilli, till onions become translucent.
Add the ground masala and fry till the raw smell is lost.
Add the fried mushrooms and mix well.
Garnish with onions and chopped coriander.
Squeeze required amount of lemon juice on top and serve.
