Fenugreek leaves are known as Menthikoora/Menthiaagu in Telugu. It adds flavor and spice to the dish. It has numerous medicinal benefits such as improving digestive problems and keeping the cholesterol levels in check, reducing inflammation inside the body, promoting lactation for breastfeeding mothers. This is a simple yet tasty dish.
Would like to share an interesting tip, when we cook greens we should not close the lid. If we do so the chlorophyll (substance which make them appear green) will be lost. It is a good practice not to cover the greens while we cook, at least we can try!
This is a variety rice that is prepared from Menthi leaves and it can be prepared in a jiffy. It makes an excellent lunch box recipe! Now let’s see the recipe.
Menthi leaves: 2 medium bunch
Onions: 2 sliced
Garlic: 1/3 cup chopped
Ginger-Garlic paste: 2 tsp
Green Chillies: 4 slitted
Rice: 1 cup
Oil: 2 tbsp
Salt: as required
Clean, wash and chop the methi leaves and the vegetables.
Cook the rice and keep it ready separately.
Take a pan, add oil and sauté the onions, garlic and green chillies for few minutes. Add the ginger-garlic paste and fry until the raw smell goes. Add the chopped methi leaves and cook for some time. Sprinkle little water to cook quickly. When the ingredients are cooked add cooked rice and salt. Mix gently and cook for few minutes.
Yayyy, the tasty rice is ready! Serve with ketchup or curd if you prefer. Enjoy!
- You can also use basmati rice for this recipe.
