Raw Mango Rice 2

Raw Mango Rice as the name suggests is a variety rice  that is prepared with raw mangoes i.e. unripe mangoes.  It is one of the best lunch box recipes or comes handy when you want something to be packed while you travel.

Serves: 1

Ingredients:

Raw Rice: ½ cup
Raw Mango: 1 cup grated
Green Chilli: 2
Black chana:  handful
Turmeric: ¼ tsp
Salt: as required

For Seasoning:

Mustard: ¼ tsp
Urid Dal: ½ tsp
Chana Dal: 1 tsp
Red Chilli: 1 broken
Hing: a pinch
Oil: 1 tbsp

For Garnishing:

Curry Leaves: 4-5
Coriander Leaves: 1 tbsp

Preparation:

Cook the rice like you always do and keep this aside.

Cook in such a way that it is not sticky and the grains are separated. Alternatively, you can also use leftover rice to prepare this.

Soak the black chana overnight and pressure cook for 5 whistles or until soft adding little salt.

Grate the raw mango and keep it side.

Finely chop the coriander and curry leaves.

Method:

In a pan add oil and do the seasoning.

Add curry leaves, green chillies, red chilli, hing and sauté for a minute.

Then add the grated raw mango  and turmeric powder and sauté for a couple of minutes.

Now, add the cooked rice, cooked chana dal  and required salt.

Mix well and simmer for few minutes and garnish with chopped  coriander leaves.

Notes:

  • Add or reduce the raw mango depending on its sourness.
  • You can also add roasted peanuts or cooked peas instead of black chana.
